Step-by-Step Instructions
  1. Preheat your oven to 200 °C (or 180 °C for fan-assisted) and line your baking tray with parchment paper.
  2. Wash and halve the small waxy potatoes, then toss them in a bowl with olive oil, paprika, garlic powder, salt, and pepper.
  3. Spread the seasoned potato halves on the baking tray and bake in the oven for about 20 minutes.
  4. While the potatoes bake, wash and trim the asparagus, then cut it into halves.
  5. After 20 minutes, add the asparagus to the tray, drizzle with olive oil, and mix gently before returning to the oven for an additional 15 minutes.
  6. Crumble feta cheese over the vegetables and bake for an extra 5 minutes until the feta is golden and melting.
  7. Remove from oven, optionally garnish with fresh herbs and lemon zest, and serve warm.
