- Prepare the focaccia pizza dough according to instructions and let it rise until doubled, about 1 hour.
- Grease a 9x13 baking pan with olive oil, stretch dough into the pan, and let rise for another 30 minutes.
- Cook bacon in a skillet until crispy, about 6–8 minutes. Drain and chop.
- Preheat oven to 400°F (200°C) for baking.
- Combine mozzarella and fontina cheeses, setting aside half for topping. Prepare jalapeños and pepperoni.
- Press indentations into the risen dough, spread pizza sauce evenly, sprinkle half the cheese, then layer on toppings, finishing with remaining cheese.
- Bake pizza at 400°F for 9 minutes, lower to 375°F (190°C), and bake for an additional 9–12 minutes until cheese is melted and bubbly.
- Cool for a few minutes, drizzle hot honey, add red pepper flakes if desired, slice and serve.
