  • 1 tablespoon Fresh Thyme Dried thyme can be used in smaller amounts.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 200°C (400°F).
  2. Toss the cubed butternut squash with olive oil, salt, and pepper, then spread it on a baking sheet and roast for 15-20 minutes.
  3. While the squash roasts, trim and halve the Brussels sprouts, toss with olive oil, salt, and pepper, and roast for 20-30 minutes.
  4. Cook the bow tie pasta in a large pot of salted water until al dente (about 8-10 minutes), then drain and reserve some pasta water.
  5. In a skillet, heat olive oil and add sliced sausage. Brown for about 4-5 minutes, then set aside.
  6. In the same skillet, sauté minced garlic for 1 minute, then add butter to create a sauce.
  7. Combine the cooked pasta with garlic butter sauce, roasted vegetables, and sausage, adjusting consistency as needed.
