  • 1 cup Heavy Whipping Cream
  • 2 tablespoons Powdered Sugar
  • 1 tablespoon Lemon and Lime Zest For garnish

Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine crushed Saltine crackers, melted unsalted butter, granulated sugar, and the beaten egg white. Press into a 9-inch pie plate.
  3. Place the prepared crust in the freezer for about 10 minutes.
  4. In a separate bowl, whisk together sweetened condensed milk, egg yolks, fresh lime juice, and fresh lemon juice until smooth.
  5. Pour the filling into the chilled crust and bake for 15 minutes.
  6. Let the pie cool at room temperature for about 1 hour, then refrigerate for at least 2 hours.
  7. Whip together the heavy cream and powdered sugar until stiff peaks form.
  8. Dollop the whipped cream over the top of the pie and garnish with lemon and lime zest.
  9. Slice the pie into portions and serve chilled.
