Step-by-Step Instructions
  1. Cut the chicken thighs into bite-sized pieces and toss with cornflour, garlic powder, salt, and pepper until coated.
  2. Preheat the air fryer to 200°C (400°F) and air fry the chicken for 10-12 minutes, shaking halfway through.
  3. Chop the bell peppers and onion into bite-sized pieces.
  4. In a wok, heat olive oil and sauté the chopped vegetables for 3-4 minutes until softened.
  5. Combine pineapple juice, light brown sugar, apple cider vinegar, ketchup, and soy sauce in the wok and simmer for 2-3 minutes.
  6. Mix cornflour with water to create a slurry and gradually add to the sauce, stirring until thickened.
  7. Add the air-fried chicken, sautéed vegetables, and pineapple chunks into the sauce and mix well.
  8. Serve over steamed rice or noodles, garnished with sesame seeds.
